et’s be real, while balancing life and work, who has time to make a fancy dinner? If you’ve been following along on my blog or Instagram, you know I’m all about keeping it simple, minimal without compromising flavor. The majority of my recipes are meals you can whip up in under 30minutes or less. So when I saw that Safeway had Smithfield® Marinated Fresh Pork Tenderloin all prepped and ready in 30-minutes or less? I though, Tuck yeah! Let’s do this. I’ll try anything that will slash my cooking time in half!

What I like about the Smithfield Marinated Golden Rotisserie Flavor Pork Tenderloin is that it is already marinated, making it perfect for any night of the week. That, right there, saves me some steps because the flavor is already there and the mess is contained in a sealed package for real flavor, real fast. Smithfield Marinated Fresh Pork recipes can be made in 30 Minutes or less – and it can be grilled, roasted or sautéed. I had so many different recipe ideas, but thought this would work amazingly well with tacos. Heavily spiced strips of pork, fried crisp in a pan, paired with warm corn tortillas, fresh salsa, avocado, radish, and you've got one incredible dinner all under 30-minutes. Don't worry, the "mmm's" and "yum's" are natural reactions!

30 Minute Dinner Street Tacos with Smithfield® Marinated Fresh Pork Tenderloin

Recipe

  • Smithfield Marinated Roasted Garlic & Herb Pork Tenderloin, thinly sliced
  • 12 Tortillas
  • ½ Cup Fresh Cilantro Leaves
  • Avocado Slices
  • Radish, thinly sliced
  • Salsa Roja
  • Coconut Oil

Instructions

Heat the oil in a wide cast iron skillet over medium heat. When the oil looks wavy, add the meat and let it sizzle, until lightly browned and cooked through, cooking for 2.5-3 minutes on each side. Turn off the heat, slice meat in stripes and return to pan to keep meat warm.

Heat the tortillas on a lightly greased hot griddle, paella or cast iron pan. Turn them once or twice until hot and slightly puffed. As they come off the griddle, stack them on a cloth napkin to steam, with another napkin on top.

To assemble the tacos, stack 2 hot tortillas on a plate. Spoon on a little sizzled pork, then top with a spoonful of fresh salsa roja. Garnish with radishes, cilantro sprigs, and avocado.

Serve and eat immediately.
