Raw Wholesome Chimichurri Veggie Coconut Wrap

This veggie wrap is loaded with so many delicious, good-for-you ingredients. It was inspired by and an ode to this cute plant-based cafe in Amsterdam called The Cold Pressed Juicery. I’m a bit sad they’ve closed all 5 locations due to the pandemic. This place was one of my favorites whenever in Amsterdam. They offered smoothies, juices, wellness tonics, and a variety of fresh veggies and herbs with a handmade dehydrated vegetable wrap for a completely raw, gluten-free, and delicious wrap.

This Raw Wholesome Chimichurri Veggie Coconut Wrap is an ode to The Cold Pressed Juicery. It features a paleo coconut wrap, loads of veggies and my favorite Chimichurri sauce.

Raw Wholesome Chimichurri Veggie Coconut Wrap

Here’s what you’ll need

2 coconut paleo wraps
4 large leaves of Iceberg Lettuce
1 cup spinach Zucchini noodles
1 tomato sliced
1 small avocado, mashed
1 tbsp chimichurri
Parchment paper

Here’s what you’ll need to know

In a medium mixing bowl add in zucchini noodles and toss together with the chimichurri (see chimichurri recipe). On a clean surface, line a sheet of partner paper, and line together the coconut paleo wraps so they overlap by 1”.

Layer the iceberg lettuce, spinach, zucchini noodles, mashed avocado, and tomato slices. Begin to tightly roll, making sure to fold in the ends. Once fully rolled, take a knife and carefully slice. Enjoy!
